Tuna Melt

Let’s say 35 year ago or so, it was all the rage to prepare food made from cans or packages. That is, you took a prepared something or other let’s say canned soup, added something, usually meat and ended up with a quick, healthy? meal for the whole family. Take a can of mushroom soup, add chicken, take pillsbury rolls wrap hot dogs, take a can of vegetable soup add ground beef and…

Well actually, the memory of this last one still makes me shiver, and not in a good way. My point is that not all of it was good but one of these easy meals, I will always remember. Pillsbury croissants placed in a muffin tin to form a cup add a mix of tuna, cheese, mayo, celery and a chopped hard boiled egg and voilà, one of the first meals I learned to prepare, a meal to satisfy our growling tummies, no leftovers or moaning with this one.

These days, I avoid packaged food but I still crave the taste of that tuna mixture. Oddly, I only recently realized that this is actually the same as a tuna melt.

So pull out your favorite bread and here goes for my version of that long ago recipe. It’s comfort food, no fancy flavors, no chickpeas or artichoke or anything else, oh and no pretense here it’s not light…

Tuna Melt

1 can tuna in water drained
1 hard cooked egg chopped
celery
mayonnaise
cheddar cheese grated
onion chopped
Toasted bread slices

Mix all ingredients in a bowl. Spread on toast and if you want sprinkle some more cheddar on top before placing in a hot oven for 10 minutes.

There isn’t a picture of the finished product as they were globbled up quickly.
